Nick's Brownies

These brownies are Nick’s favourite because it’s a one bowl deal. He makes them so well they’re a perennial request at school functions. They asked him to bring these on Oct 30 for the Hallowe'en party at school. He made the double recipe and cut all the brownies into 2x2" squares. He brought a box of brownies from 2 of the pans to school, and left the rest for the family. The box he brought back to school was empty when he came home.

PFRA 50th 1935-1985 Cookbook

 Preheat oven to 350° F.

Grease 1 – 11 x 15 pan or 3 – 7 x 11 brownie pans for double recipe.

Single                                                Double

1 ½ cups            flour                      3 cups

1 tsp                     salt                         2 tsp

2 cups                 sugar                      4 cups

5 tbsp                  cocoa                     ½ cup

2 tsp                     vanilla                    4 tsp

1 cup                    vegetable oil        2 cups

4                             eggs                         8

¼ cup                  water                       ½ cup

½ cup                  nuts, chopped (optional)        


Mix all ingredients together in one bowl. Pour into prepared pans.

Bake in 350° F oven for 25-30 mins. Do Not Overbake!


Note: To make it easy for the kids to take their baking out of the pan, we line our pans with parchment paper after a light greasing. After it's cooled, we just lift out the paper, place on a cutting board and cut. Hardly any mess in the pan.
