If you don’t have or don’t like zucchini, use fresh, chopped spinach or small pieces of broccoli instead.

Grease a 10 inch pie or quiche pan.
Ingredients: 3 cups grated zucchini
1 cup biscuit mix (Bisquick or homemade)
½ tsp salt
¼ tsp pepper
1 small onion, chopped
½ cup margarine
1 cup grated cheese (cheddar, brick, colby, etc)
Mix all ingredients together and pour into greased pie or quiche pan.
Bake 30-40 mins.
Let stand 5 minutes in pan before cutting into pie-shaped wedges.
Yield: 6 or 8 wedges depending on size.
